A delicious alternative to pumpkin pie with a Grape-Nuts crust. Even tastier than the classic!
Ingredients
For Crust:
1 1/2 cups pulverized Grape-Nuts
2 tablespoons maple syrup or honey
5 tablespoons apple juice
For Filling:
3 cups pureed acorn squash
1/2 cup sugar (brown, white, or mixed)
1/2 teaspoon salt
1/4 teaspoon ground ginger
1/4 teaspoon ground cloves
3/4 teaspoon cinnamon
1/2 cup skim milk (or soy milk)
Instructions
1. Prepare crust: Mix pulverized Grape-Nuts with maple syrup and apple juice. Press into 9-inch pie pan.
2. Peel and cube acorn squash.
3. Cover with water and boil until tender. Drain and puree.
4. Mix squash with sugar, salt, ginger, cloves, cinnamon, and milk.
5. Pour into prepared crust.
6. Bake at 400°F for 45-55 minutes.
7. Chill overnight in refrigerator before serving.
