Rich chocolate cookies with cornflakes for crunch. A New Zealand classic made low-fat!
Ingredients
1 cup flour
1 teaspoon baking powder
1/4 cup white sugar
2 egg whites (or substitute for 1 egg)
1 1/2 tablespoons unpacked brown sugar
1/2 tablespoon vanilla extract
1/4 teaspoon cinnamon
1/8 teaspoon ground nutmeg
2 1/2 tablespoons unsweetened cocoa powder
1 cup cornflakes
For icing (optional):
Applesauce, icing sugar, cocoa, and water
Instructions
1. Preheat oven to 375°F (190°C).
2. Mix egg whites, vanilla, and sugars in a small bowl.
3. In a large bowl, mix all dry ingredients including cornflakes.
4. Make a well in dry ingredients, add wet ingredients.
5. Mix carefully to avoid crushing cornflakes too much.
6. Drop spoonfuls onto nonstick cookie tray and flatten slightly.
7. Bake for 12-15 minutes until lightly browned.
8. For icing, mix applesauce, icing sugar, cocoa, and water to desired consistency.
9. Ice cookies once cooled.
