Aromatic split pea soup from Moosewood with warm spices and fresh parsley. Worth the effort!
Ingredients
1 cup dried split peas
3 cups water (for peas)
2 cups chopped onions
2 large cloves garlic, minced
2 bay leaves
1 teaspoon ground cumin
1/2 teaspoon cinnamon
1/4 teaspoon cayenne
1/2 teaspoon ground cardamom
2 cups vegetable stock
2 teaspoons fresh lemon juice
1/2 cup cooked rice
Salt and pepper to taste
1/2-3/4 cup chopped fresh parsley
Instructions
1. Rinse peas, put in soup pot with 3 cups water. Bring to boil, reduce heat, cover, and simmer 45-60 minutes.
2. Meanwhile, sauté onions and garlic in 2 tablespoons water until translucent.
3. Mix in spices and sauté 5-10 minutes more, stirring to prevent burning. Set aside.
4. When peas are cooked, stir in onion mixture and vegetable stock.
5. Use some stock to deglaze the sauté pan - wonderful flavors there!
6. Add lemon juice and cooked rice. Season with salt and pepper.
7. Stir in parsley and reheat if necessary.
