Warming African stew with sweet potatoes, chickpeas, and couscous. Perfect for cold nights!
Ingredients
3-4 kohlrabies, peeled and cut into chunks (or parsnips)
1 large onion, chopped
2 sweet potatoes, peeled and cut into chunks
2 zucchini, sliced thick
5 fresh tomatoes (or 16 oz can)
15 oz can garbanzo beans with liquid
1/2 cup couscous or bulgur wheat
1/4 cup raisins
1 teaspoon ground coriander
1/2 teaspoon turmeric
1/2 teaspoon cinnamon
1/2 teaspoon ginger
1/4 teaspoon cumin
3 cups water
Instructions
1. Combine all ingredients in a large saucepan.
2. Bring to a boil.
3. Lower heat and simmer until vegetables are tender, about 30 minutes.
Alternatively, cook couscous separately and serve stew over it. Also good over mashed potato, brown rice, wild rice, or small shell noodles.
