Eggplant Red Pepper Salad (Aijer)

A Middle Eastern roasted eggplant and red pepper salad with garlic and lemon. Great in pita bread!

Ingredients

1 large eggplant 1 red bell pepper 2 cloves garlic, minced or pressed 3 tablespoons lemon juice Salt to taste

Instructions

1. Preheat oven to 400°F. 2. Bake whole eggplant until roasted and tender, about 1 hour 15 minutes. 3. Roast red pepper until tender and charred. 4. Cool eggplant, peel and dice. 5. Cool pepper, remove seeds and dice. 6. Combine eggplant and pepper in bowl. 7. Add garlic and lemon juice. 8. Mix and chill before serving. Serving suggestion: Serve in pita bread with a garnish of feta cheese.
