Amaranth Banana Pancakes

Fun vegan pancakes with banana slices baked right in. Kids love these!

Ingredients

1 cup amaranth flour 1 tablespoon egg replacer 1/2 teaspoon guar gum (optional with egg replacer) 1/4 cup water plus more as needed 1-2 bananas, sliced

Instructions

1. Mix amaranth flour, egg replacer, guar gum, and water to form batter. 2. Heat nonstick skillet. 3. Pour pancakes onto hot skillet. 4. Add banana slices while batter is still wet so they sink in partially. 5. Cook until ready to flip. 6. Turn pancakes so banana slices contact the skillet. 7. Serve banana-side up. 8. The warm bananas sweeten the pancakes naturally.
