A quick, vibrant pasta with a homemade roasted red pepper sauce. Easy enough for a weeknight dinner.
Ingredients
2 medium red bell peppers
1/2 medium red onion
2 cloves garlic
1 tablespoon lemon juice
1/2 cup water
1/4 cup fat-free rice milk (optional)
1 teaspoon salt
1 teaspoon black pepper
1 tablespoon dried basil
2 servings angel hair pasta
Instructions
1. Roast peppers in broiler or oven at 375°F for 20 minutes, turning every 5 minutes until slightly charred on all sides.
2. Plunge peppers into ice water to shrivel skin, then peel easily.
3. Seed and coarsely chop the roasted peppers.
4. Water-fry onion and garlic until translucent.
5. Transfer onion and garlic to food processor, pulse a few seconds.
6. Add peppers, lemon juice, and seasonings. Puree until slightly smooth.
7. Add rice milk if needed to thin.
8. Cook pasta according to package directions.
9. Serve sauce immediately over hot pasta.
