Moist and spicy apple bars perfect for breakfast or dessert.
Ingredients
1 cup whole wheat flour
1/2 cup rolled oats
1 tablespoon ground cinnamon
1 teaspoon baking powder
1 egg equivalent (EnerG egg replacer)
1/2 cup soy milk
1/4 cup apple juice concentrate
1/4 cup maple syrup
1/4 cup raisins or craisins
1 1/4 cups chopped peeled apples
Instructions
1. Soak raisins in apple juice concentrate for 30 minutes.
2. Preheat oven to 350°F. Spray 8-inch square pan with vegetable spray.
3. Stir together flour, oats, cinnamon, and baking powder.
4. Add apples and toss to coat.
5. Stir together all wet ingredients including soaked raisins.
6. Pour wet into dry, fold together just until moistened.
7. Spread batter in prepared pan.
8. Bake 20 minutes until set.
