A moist and flavorful coffee cake loaded with fresh apples and cinnamon. Perfect for brunch or afternoon tea.
Ingredients
For the Apple Filling:
2 tablespoons cinnamon
5 tablespoons sugar
5-6 cups sliced apples (Granny Smith recommended)
For the Cake:
2 cups sugar
1 cup applesauce
4 teaspoons vanilla
1/2 cup orange juice
Pinch of salt
4 egg equivalents, lightly beaten
3 cups unbleached all-purpose flour
1 tablespoon baking powder
1 teaspoon nutmeg
Instructions
1. Preheat oven to 350°F. Spray a 12-cup tube or bundt pan with cooking spray.
2. Combine cinnamon and sugar. Set aside 1 tablespoon. Toss apples with remaining mixture.
3. Whisk together sugar, applesauce, vanilla, orange juice, salt, and eggs.
4. Combine flour, baking powder, and nutmeg. Fold into sugar mixture.
5. Spoon slightly more than 1/3 of batter into pan.
6. Cover with half of the apple mixture.
7. Add remaining batter and remaining apples.
8. Sprinkle top with reserved cinnamon-sugar.
9. Bake for 1 hour or until done.
10. Loosen sides with knife, then invert onto serving plate.
