Apple Cinnamon Couscous Cake

An innovative no-bake cake made with whole wheat couscous. No flour, no oil, no added sugar - sweetened only with apple juice!

Ingredients

1 1/4 cups whole wheat couscous 2 cups apple juice 1 cup water Pinch of sea salt 1 teaspoon ground cinnamon 1/2 teaspoon vanilla extract

Instructions

1. Bring water and apple juice to a boil with a pinch of salt. 2. Add couscous and cinnamon. Stir well. 3. Cook on low heat for 10 minutes, stirring occasionally. 4. Remove from heat and stir in vanilla. 5. Let sit for 10 minutes. 6. Rinse an 8x8 baking dish with water but do not dry. 7. Pack couscous firmly into the baking dish. 8. Allow to cool completely at room temperature. 9. Cut into squares and serve.
