Quick and aromatic snack bars with apples, oats, and cinnamon. Fat-free and vegan!
Ingredients
1 cup whole wheat flour
1/2 cup rolled oats
1 tablespoon ground cinnamon
1 teaspoon baking powder
1/4 cup brown sugar
2 egg whites or 1 egg equivalent
1/2 cup soy or dairy milk
1/4 cup apple juice concentrate
1/4 cup raisins or craisins
1 1/4 cups chopped peeled apples
Instructions
1. Soak raisins in apple juice concentrate for 30 minutes.
2. Preheat oven to 350°F.
3. Spray 8-inch square pan with vegetable spray.
4. Stir together dry ingredients.
5. Add apples and toss to coat.
6. Stir together all wet ingredients.
7. Pour wet into dry, fold together just to moisten.
8. Spread thick batter into prepared pan.
9. Bake 20 minutes until set.
10. Cool and cut into bars.
