An Italian-inspired dessert bread filled with spiced apples and glazed with apricot.
Ingredients
Dough:
1 small apple, cored and quartered
2 cups unbleached flour
1/4 teaspoon cinnamon
1 tablespoon sugar
1 teaspoon quick-rising yeast
1/4-1/2 teaspoon salt
1/3-1/2 cup hot water
1/3 cup raisins
Filling:
4 medium apples, sliced paper thin
Juice of 1/2 lemon
Pinch each: white pepper, cloves, cardamom, nutmeg, ginger
1 teaspoon vanilla
1/4-1/3 cup sugar
1/4-1/2 cup brown sugar
1 teaspoon cornstarch
Glaze:
2 tablespoons apricot jam
1 teaspoon water
Instructions
1. Process quartered apple in food processor 20 seconds.
2. Add flour, cinnamon, sugar, yeast, and salt; process 5 seconds.
3. Add processed apple; process 5 seconds.
4. With processor running, add hot water gradually until dough forms ball.
5. Knead in raisins on floured surface for 1 minute.
6. Let rest in plastic bag 15-20 minutes.
7. Roll dough into 12-14 inch circle, place in sprayed skillet.
8. For filling: Mix thin apple slices with lemon juice, spices, sugar, and cornstarch.
9. Spoon filling into dough.
10. Bake at 400°F for 20 minutes, rotate, reduce to 375°F, bake 20 more minutes.
11. For glaze: Melt jam with water, brush over apples.
Serves 8-10.
