Apple Pie with Millet Crust

A unique gluten-free pie with a millet and pumpkin seed crust topped with fresh cranberries.
Ingredients
1/4 cup pumpkin seeds
2/3 cup millet, rinsed well
1/2 cup apple juice or cider
7 medium sweet apples, grated
1/8 teaspoon salt
1/2 teaspoon cinnamon
1 tablespoon arrowroot
1/4 cup cranberries, halved
Instructions
1. Preheat oven to 375°F.
2. Toast pumpkin seeds in pie plate until popped, 10-15 minutes. Coarsely grind.
3. Combine ground seeds and millet in a bowl.
4. Bring apple juice to a boil, pour over seed/millet mixture. Stir well.
5. Pour into pie plate and push mixture up the sides with a wooden spoon.
6. Combine grated apples, salt, cinnamon, and arrowroot.
7. Spoon over millet crust and smooth with back of spoon.
8. Top with halved cranberries.
9. Cover with foil and bake 45 minutes to 1 hour.
10. Let cool completely before slicing.
