If you love oatmeal cookies, this pie is for you! The crust doubles as a delicious cookie.
Ingredients
For Crust:
2 2/3 cups all-purpose flour
1 cup old-fashioned rolled oats
2/3 cup sugar
1 teaspoon cinnamon
1 teaspoon baking soda
3/4 cup unsweetened applesauce
1 egg white
1 1/2 teaspoons vanilla
For Filling:
7 large tart apples, peeled and sliced
1/2 cup sugar
3/4 cup apple juice
2 teaspoons cinnamon
2 teaspoons vanilla
1 tablespoon cornstarch
Instructions
1. Preheat oven to 350°F. Spray 9-inch pie pan.
2. Mix flour, oats, sugar, cinnamon, and baking soda.
3. Mix applesauce, egg white, and vanilla. Combine with dry ingredients.
4. Roll half the dough into 12-inch circle on floured surface.
5. Press into pie pan. Bake 10-13 minutes until set.
6. Cook apples with sugar, 1/2 cup juice, cinnamon, and vanilla until tender.
7. Mix cornstarch with remaining juice, add to apples, cook until thick.
8. Spoon into baked crust.
9. Roll remaining dough into 11-inch circle, pierce with fork, place over filling.
10. Bake 15-20 minutes until crust is firm.
