Crispy pancakes combining shredded apples and potatoes. Great in a waffle maker too!
Ingredients
1 1/4 cups unpeeled finely chopped apples
1 cup peeled grated potatoes
1/2 cup unsweetened applesauce
1/2 cup all-purpose flour
2 egg whites
1 teaspoon salt
Instructions
1. Preheat oven to 475°F. Spray cookie sheet with nonstick spray.
2. Combine apples, potatoes, applesauce, flour, egg whites, and salt.
3. Heat large nonstick skillet with cooking spray over medium heat.
4. Drop rounded tablespoons of batter 2 inches apart.
5. Cook 2-3 minutes on each side until lightly browned.
6. Place pancakes on prepared cookie sheet.
7. Bake 10-15 minutes until crisp.
8. Serve with additional applesauce or apple slices.
Tip: Also works great in a waffle maker sprayed with Pam!
