Fresh apple salad with a creamy tofu-honey dressing. Light and satisfying!
Ingredients
5 Red Delicious apples, sliced
1/4 cup fresh lemon juice
3 stalks celery, diced
1 (8-oz) can pineapple tidbits, drained
Dressing:
1 cup plain nonfat yogurt
1/2 cup low-fat silken tofu
1 tablespoon honey
1 teaspoon ground cinnamon
Mint sprigs for garnish
Instructions
1. Place sliced apples in mixture of lemon juice and water to prevent browning.
2. For dressing: Combine yogurt, tofu, honey and cinnamon in food processor.
3. Blend until smooth and chill.
4. At serving time, drain apples.
5. Combine apples, celery, and pineapple.
6. Add dressing and toss gently.
7. Garnish with mint sprigs.
