Apple and Sausage Stuffed Squash

Warm and filling autumn dish with plant-based sausage, apples, and herbs. Vegan comfort food!
Ingredients
1 acorn or butternut squash
Gimme Lean sausage-flavored (soy product, vegan and fat-free)
Cooked brown rice
Diced onion (half an onion)
Chopped apple (1 apple)
Sage, thyme, or rosemary
Instructions
1. Cut squash in half, scoop out seeds and stringy parts.
2. Place halves cut-side up on cookie sheet. Cover with aluminum foil.
3. Bake at 350°F until tender (40-60 minutes).
4. In a bowl, mix together Gimme Lean, brown rice, onion, apple, and herbs in desired ratios. Use enough stuffing to fill squash generously.
5. When squash is tender, remove foil and stuff cavities generously.
6. Return to oven uncovered. Bake until stuffing is warm and starting to brown (about 10 minutes).
