Light and fluffy pancakes with three types of flour and fresh strawberries.
Ingredients
1 cup whole wheat pastry flour
1 cup whole wheat flour
1/2 cup barley flour or unbleached flour
3 teaspoons baking powder
1 teaspoon lemon zest
4 egg whites
1/4 cup applesauce
2 cups apple juice
1/2 to 1 cup sliced fresh strawberries
Instructions
1. Mix together dry ingredients including lemon zest.
2. Mix together egg whites, applesauce, and apple juice.
3. Combine wet and dry ingredients and mix well.
4. Fold in fresh strawberries.
5. Cook on nonstick griddle until bubbles form and edges set.
6. Flip and cook until golden brown.
Note: You can use any kind of fresh fruit - blueberries, peaches, or bananas work great too!
