A simple Middle Eastern salad with tomatoes, zucchini, and cumin. Perfect with pita bread.
Ingredients
2 tomatoes, chopped
1 zucchini, peeled and chopped
1/2 onion, chopped very fine (or several scallions)
2 teaspoons cumin
Dash of coriander
Cayenne pepper to taste
1-2 tablespoons lemon juice
1 teaspoon vinegar
Salt to taste
1 tablespoon water
Instructions
1. Combine tomatoes, zucchini, and onion in bowl.
2. Add cumin, coriander, cayenne, lemon juice, vinegar, and salt.
3. Add water and toss well with hands (it seems to taste better!).
4. Let salad sit for flavors to develop.
5. Serve at room temperature with pita bread.
