A Southwestern pasta dish with kidney beans, corn, and chili spices. One-pan comfort food at its best.
Ingredients
1 onion, chopped
1 green bell pepper, chopped
2 cloves garlic, minced
2 tablespoons chili powder
1/2 teaspoon salt
1/2 teaspoon cumin
1 can (14 oz) tomatoes
1 can (15 oz) kidney beans
1 can (15 oz) corn
8 ounces elbow macaroni
Instructions
1. Sauté onion, green pepper, garlic, chili powder, salt, and cumin until vegetables are tender.
2. Stir in tomatoes, breaking up with spoon.
3. Add kidney beans and corn.
4. Bring to boil, reduce heat and simmer 15 minutes, stirring occasionally.
5. Meanwhile, cook elbow macaroni according to package directions.
6. Drain pasta and toss with vegetable mixture.
7. Serve hot.
