A creamy artichoke sauce over pasta without all the fat. Uses soy milk for creaminess.
Ingredients
1 can artichokes (not packed in oil)
4-5 fresh tomatoes, chopped into large chunks
1 medium onion, chopped
Fresh garlic or 1 tablespoon garlic powder
1/2 cup fresh basil, chopped (or 3 tablespoons dried)
2 tablespoons whole wheat flour
1/2 cup or more non-fat soy milk or rice milk
Fettuccine, macaroni, or spaghetti
Instructions
1. Prepare pasta al dente and set aside.
2. Place onion, tomato, garlic, and basil in a nonstick pan.
3. Sauté in a little liquid from the artichoke can.
4. Cut artichokes into small pieces.
5. Add artichokes and remaining liquid to the pan.
6. Sprinkle with flour and stir.
7. Add soy or rice milk, stirring to desired thickness.
8. Cook briefly just to heat and blend.
9. Top pasta with artichoke sauce.
Serves 2: 210 calories, 1.5g fat per serving.
