Artichoke White Bean Soup

Quick pureed soup with artichokes and cannellini beans. Ready in under 30 minutes!
Ingredients
1 medium onion, chopped
1 (10 oz) package frozen artichoke hearts
1 clove garlic, sliced
2 (15 oz) cans cannellini beans, rinsed and drained
2 cups vegetable broth
Juice from half a lemon
Salt and pepper to taste
Instructions
1. Cook artichoke hearts according to package until almost fully cooked. Drain well.
2. In a 4-quart non-stick pan sprayed with olive oil cooking spray, sauté onion about 3 minutes.
3. Add artichoke hearts and garlic. Cook another 5 minutes.
4. Add broth and beans. Simmer about 5 minutes until beans are heated through.
5. Transfer to food processor and puree.
6. Return to pan. Add lemon juice, salt, and pepper. Heat through.
