Asian Millet Salad

A protein-rich grain salad with tofu, vegetables, and an Asian-inspired dressing.

Ingredients

2 cups cooked millet 1 (10-oz) package tofu, diced 3/4 cup chopped snow peas 3/4 cup frozen peas, thawed 1 (8-oz) can sliced water chestnuts 1/2 cup chopped scallions Dressing: 6 tablespoons mirin or dry sherry 3 tablespoons soy sauce 1 1/2 tablespoons rice or cider vinegar 1 clove garlic, minced 1 teaspoon sugar

Instructions

1. In a large bowl, combine millet, tofu, snow peas, peas, water chestnuts, and scallions. 2. In a small bowl, stir together mirin, soy sauce, vinegar, garlic, and sugar. 3. Pour dressing over salad and toss to combine. 4. Serve at room temperature or chilled.
