Asparagus Pasta Salad

Colorful pasta salad with asparagus, artichokes, and blackberry vinaigrette. Only 155 calories per cup!

Ingredients

3 oz dry angel hair pasta 1 pound asparagus, cut diagonally into 2-inch pieces 3 oz red onion, sliced and quartered (about 1/2 cup) 6 canned artichoke hearts, quartered 1 cup unsweetened frozen blackberries, thawed 3 tablespoons raspberry vinegar 2 packets sweetener (or 1 tablespoon sugar) 1 teaspoon salt 1 teaspoon fat-free Italian dressing Ground pepper to taste

Instructions

1. Break pasta into 1-1.5 inch pieces. Cook in boiling water about 5 minutes until done. Rinse with cold water, set aside. 2. Steam onions and asparagus for about 6 minutes. Rinse with cold water and drain well. 3. Stir asparagus and onions into pasta. 4. Add remaining ingredients and mix well. 5. Chill well before serving.
