Creamy pureed asparagus soup with roasted red pepper. Ready in an hour!
Ingredients
2 lbs asparagus, trimmed and cut into 1-inch pieces
2 cups veggie broth
1 roasted red pepper, diced (1/3-1/2 cup)
1 can evaporated skim milk
Pepper to taste
Instructions
1. Place asparagus and broth in 4-quart pan. Simmer 15 minutes until tender.
2. Puree asparagus/broth in blender. Reserve some pieces for chunkier consistency if desired.
3. Return puree to pan.
4. Add red pepper, any reserved asparagus, black pepper, and evaporated milk.
5. Heat until thickened to your liking.
Note: Add flour or cornstarch to speed thickening. Roast pepper while asparagus simmers. Serve with salad and crusty bread!
