Ingredients
2 red peppers
2 pounds asparagus
2 tablespoons balsamic vinegar
1 teaspoon grainy mustard
Instructions
1. Slice red peppers into big pieces and grill until skin is blistered and soft.
2. Remove skin and slice finely when cool.
3. Steam or microwave asparagus until tender.
4. Whisk together balsamic vinegar and mustard for dressing.
5. Toss asparagus with peppers and dressing.
6. Serve warm or chilled.
