Australian Tabouli

A hearty tabbouleh variation with chickpeas and fresh vegetables.

Ingredients

2/3 cup bulgur wheat 1/2 cucumber, finely diced 1/2 purple onion, finely diced 1 tomato, seeds removed and finely diced 1 tablespoon balsamic vinegar 1 bunch flat leaf parsley, chopped Pepper to taste For chickpea addition: 2 cups cooked chickpeas 1/4 cup corn 1/4 cup diced red bell pepper Fat-free Italian dressing

Instructions

1. Add bulgur to boiling water and simmer until soft. Drain and rinse with cold water. 2. Remove parsley leaves and chop finely. 3. Combine all ingredients in a large bowl. 4. Add balsamic vinegar and pepper to taste. 5. Chill for about 1 hour to allow flavors to mingle. 6. Serve on romaine lettuce. Makes approximately 6 servings.
