Hearty fall stew with pumpkin, beans, and hominy. Originally a chili cook-off entry!
Ingredients
2 cups onions, chopped
2 tablespoons sautéing liquid
1 cup chopped celery
1/4 cup garlic, minced
1 tablespoon blackstrap molasses
28 oz can diced tomatoes
16 oz can mashed pumpkin
3 cups cooked beans
1 cup water
1 cup chopped sweet potato
1 cup white hominy, undrained
1 1/2 teaspoons salt
1 1/2 teaspoons cumin
1 1/2 tablespoons chili powder
1 teaspoon crushed chiles
1/4 teaspoon fenugreek
1/4 teaspoon coriander
1-2 teaspoons ginger powder
1/8 teaspoon asafoetida powder
Juice of 1/2 lemon
Instructions
1. Sauté onions in liquid until softened.
2. Add all remaining ingredients except lemon juice.
3. Cook until thick and sweet potato pieces are soft.
4. Add lemon juice before serving.
