Aztec Bean Salad

A colorful Mexican-inspired salad with black beans, corn, and a zesty lime dressing. Perfect for summer gatherings.

Ingredients

2 cans (15 oz each) black beans, rinsed and drained 1 can (15 oz) corn, drained (or 2 cups fresh) 1 large tomato, diced 1/2 red onion, finely diced 1 jalapeño, seeded and minced 1/4 cup fresh cilantro, chopped 3 tablespoons lime juice 1 tablespoon red wine vinegar 1 teaspoon cumin 1/2 teaspoon chili powder Salt to taste

Instructions

1. Combine black beans, corn, tomato, onion, jalapeño, and cilantro in a large bowl. 2. In a small bowl, whisk together lime juice, vinegar, cumin, chili powder, and salt. 3. Pour dressing over salad and toss well. 4. Cover and refrigerate at least 1 hour. 5. Taste and adjust seasonings before serving. 6. Serve cold or at room temperature.
