A South African-inspired casserole with baked beans over sliced potatoes. Easy comfort food!
Ingredients
1 onion, chopped
1 sprig fresh thyme
1-2 cloves garlic
1-2 celery sticks, chopped
Mushrooms, chopped (optional)
Splash of white wine for sautéing
1 can baked beans
1/2 can peas (optional)
1 cup fat-free cottage cheese
1 large potato, peeled and thinly sliced
Whole wheat breadcrumbs
Pepper to taste
Instructions
1. Preheat oven to 180°C (350°F).
2. Sauté onion, thyme, garlic, celery, and mushrooms in white wine until soft.
3. Add baked beans and peas if using. Stir gently.
4. Stir in cottage cheese and season with pepper.
5. Place potato slices in bottom of ovenproof dish.
6. Pour bean mixture over potatoes.
7. Sprinkle breadcrumbs on top.
8. Bake until potato slices are tender.
9. Serve with green salad.
