Slow-baked root vegetables that get sweeter as they cook. Perfect comfort food!
Ingredients
2 large carrots, sliced
1 medium turnip, quartered
1 medium rutabaga, quartered
1/4 cup dry sherry or veggie broth
1 tablespoon apple juice concentrate
1 tablespoon honey or brown sugar
1 teaspoon grated lemon rind
Instructions
1. Preheat oven to 350°F.
2. Spray a 2-quart casserole dish with cooking spray.
3. Arrange vegetables in dish.
4. In small bowl, combine sherry or broth, apple juice concentrate, honey, and lemon rind.
5. Drizzle over root vegetables.
6. Cover with aluminum foil.
7. Bake until tender, about 40-50 minutes.
