Hollow out stale hamburger buns and fill with a creamy mushroom mixture. Quick and delicious!
Ingredients
2 stale hamburger buns (whole wheat preferred)
2-3 large mushrooms, chopped
1 small onion, finely chopped
3-4 fresh basil leaves, chopped (or thyme sprigs)
2 cloves garlic, crushed
1/2 cup soy milk
1/2 teaspoon mustard (Dijon or English)
Salt and pepper to taste
Instructions
1. Preheat oven to 180°C (350°F).
2. Slice top off each roll.
3. Carefully hollow out each roll, keeping the bread crumbs.
4. Sauté mushrooms, onion, garlic, and herbs in soy milk until onions are soft.
5. Crumble reserved bread into the mushroom mixture.
6. Stir well - mixture will become thick and creamy.
7. Add mustard and seasoning.
8. Spoon mixture into rolls, piling high.
9. Replace tops.
10. Bake 5 minutes until rolls are crisp.
11. Serve with salad.
