Ingredients
1/2 large baked sweet potato, peeled and sliced into rounds
1/2 cup tomato paste
1/2 cup chopped bell peppers
1/2 cup chopped onion
1/2 cup chopped mushrooms
1/2 cup chopped canned artichokes
1/2 cup grated carrot
1/2 cup chopped vegetarian pepperoni (fat-free)
1/2 cup chopped pineapple (optional)
1/4 cup grated skim milk mozzarella (optional)
1/4 cup chopped pickled jalapeño peppers (optional)
1/4 cup fresh basil
1-2 fat-free pizza bases
Instructions
1. Preheat oven to 450°F.
2. Spread tomato paste on pizza base.
3. Arrange sweet potato rounds and all other toppings artistically on top.
4. Bake until brown and bubbly, about 15-20 minutes.
5. Let cool slightly before eating.
