An Italian-inspired bean salad dressed with balsamic vinegar and fresh basil. Elegant enough for dinner parties.
Ingredients
1 can (15 oz) cannellini beans, rinsed and drained
1 can (15 oz) kidney beans, rinsed and drained
1 cup cherry tomatoes, halved
1/4 cup red onion, thinly sliced
1/4 cup fresh basil, chopped
3 tablespoons balsamic vinegar
1 tablespoon Dijon mustard
1 clove garlic, minced
Salt and freshly ground black pepper
Mixed greens for serving (optional)
Instructions
1. Combine both types of beans, tomatoes, onion, and basil in a bowl.
2. Whisk together balsamic vinegar, Dijon mustard, and garlic.
3. Season dressing with salt and pepper.
4. Pour over bean mixture and toss gently.
5. Let marinate 30 minutes at room temperature or refrigerate up to 24 hours.
6. Serve over mixed greens if desired.
