Chewy cookies with toasted oats, sweet dates, and ripe bananas. Naturally sweetened and satisfying.
Ingredients
1/2 cup packed brown sugar
1/2 cup honey
2 large ripe bananas (at least 2 cups mashed)
1 tablespoon vanilla extract
3/4 cup chopped dates
2 cups rolled oats, toasted
1/2 cup rolled wheat flakes, toasted
1 cup cake flour
1 teaspoon baking soda
2 teaspoons ground cinnamon
1/2 teaspoon salt
Whole wheat flour for dusting
Instructions
1. Preheat oven to 350°F. Line baking sheets with parchment.
2. Toast oats in a dry skillet over medium heat until fragrant, about 5 minutes.
3. Mash banana and mix with wet ingredients and brown sugar.
4. Add toasted grains to wet mixture while still warm.
5. Stir in remaining dry ingredients.
6. Pour some whole wheat flour into a dish.
7. Scoop tablespoons of dough, dip one side in flour.
8. Place flour side down on baking sheet.
9. Bake 10-12 minutes until lightly browned.
10. Cool on wire rack. Makes 3 dozen cookies.
