Hearty barley pilaf with mushrooms, herbs, and white beans. Comfort food at its best!
Ingredients
1 cup raw barley
2 tablespoons water
1 medium onion, chopped
2 medium celery stalks, chopped
2 cloves garlic, minced
2 cups coarsely chopped mushrooms
2 tablespoons chopped fresh parsley
2 tablespoons chopped fresh dill
1 1/4 cups cooked navy or great northern beans
2-3 tablespoons soy sauce, to taste
1 tablespoon honey
Freshly ground pepper to taste
Instructions
1. Cook the barley according to package directions.
2. Heat water in a large skillet. Add onion, celery, and garlic.
3. Sauté over moderate heat until onion is translucent.
4. Add mushrooms and continue to sauté until onion is golden.
5. Add cooked barley and all remaining ingredients.
6. Cook over low heat, stirring frequently, for 10 minutes.
7. Serve at once.
