Smoky, flavorful stuffed peppers with barley and barbecue sauce. Hearty and satisfying!
Ingredients
1 cup water
1 cup diced onion
1 cup diced carrot
1 clove garlic, minced
1/2 cup pearl barley
1 vegetarian bouillon cube
1 teaspoon hickory smoke salt
1/2 teaspoon poultry seasoning
2 cups grated zucchini
2 egg whites
1/2 cup barbecue sauce (Hunt's original)
6 green bell pepper halves
Instructions
1. Add onion, carrots, garlic, bouillon, salt, poultry seasoning, and barley to water in saucepan.
2. Bring to boil and simmer 25-30 minutes.
3. Stir in zucchini, egg whites, and barbecue sauce.
4. Remove seeds from pepper halves.
5. Steam peppers for 5 minutes (steamer or microwave).
6. Fill halves with barley mixture.
7. Bake at 350°F for 40 minutes until filling is firm.
8. Add more barbecue sauce if desired.
