Basic Bean Burgers

A hearty veggie burger with TVP and beans. Can be grilled or baked.

Ingredients

1 cup TVP granules 1 scant cup boiling water 1 tablespoon tomato paste or ketchup 1 (16 oz) can pinto or kidney beans, drained 1/4 cup whole wheat bread crumbs 2 cloves garlic, minced 1/2 teaspoon oregano 1 tablespoon tamari or soy sauce 1 teaspoon sweetener Salt and pepper to taste Whole wheat flour for dusting

Instructions

1. Pour boiling water over TVP and tomato paste. Stir and rest 10 minutes. 2. In food processor, combine TVP mixture and remaining ingredients except flour. 3. Pulse until almost a puree. 4. Dust hands with flour and shape into 6 burgers. 5. Dust burgers lightly with flour. 6. Layer with waxed paper and refrigerate at least 1 hour. 7. Grill on foil-covered grill about 10 minutes per side. 8. Serve on buns with your favorite toppings.
