Quick 20-minute couscous pilaf with balsamic-fried onions and currants. Deliciously simple!
Ingredients
1 cup couscous
1 1/4 cups water
1 medium onion, chopped
Balsamic vinegar
1 stalk celery, chopped
1/4 cup currants (or raisins)
Cumin to taste
Chile pasilla to taste (not hot)
Instructions
1. Heat frying pan on medium-high. Pour balsamic vinegar to cover bottom generously.
2. Add chopped onion, stir to coat. Cover and cook, stirring occasionally until onions are translucent but still slightly crunchy and sweet.
3. While onion fries, heat water to boil.
4. Chop celery.
5. Mix couscous with currants and spices.
6. When water boils, turn off heat and add all dry ingredients. Stir, cover for 5 minutes.
7. Halfway through, add fried onions, stir, and re-cover.
