Master this creamy Italian rice dish technique. Perfect base for endless variations!
Ingredients
1 cup arborio rice
3 cups hot vegetable stock
Garlic, crushed
Nonstick spray
1 cup frozen vegetables (corn and peas work well)
Instructions
1. Spray pan with nonstick spray. Sauté crushed garlic briefly.
2. Add arborio rice and sauté over medium-high heat until translucent.
3. Add about 1/2 cup hot stock and stir. Reduce heat to medium-low.
4. When liquid is absorbed, add another 1/2 cup stock and continue stirring.
5. Keep stirring and adding stock for 20-30 minutes total.
6. When rice is almost done, throw in frozen veggies for texture.
7. Serve immediately.
Note: The key is constant stirring and patient, gradual liquid addition.
