BBQ Black Beans Over Elbows

A unique pasta dish combining black beans with barbecue sauce for a Southwestern flair.

Ingredients

3 cups elbow macaroni 32 oz black beans, canned, drained and rinsed 4 oz can chopped green chilies 14 oz can chopped tomatoes with juice 10 oz frozen corn kernels, thawed 2 tablespoons barbecue sauce (or more to taste)

Instructions

1. Cook elbow macaroni according to package directions. Drain. 2. In a large pot, combine black beans, green chilies, tomatoes with juice, corn, and barbecue sauce. 3. Heat through over medium heat, stirring occasionally. 4. Toss with cooked pasta. 5. Adjust barbecue sauce to taste. 6. Serve hot.
