Mexican-inspired lasagna with refried beans, corn, and taco sauce. Even better the next day!
Ingredients
1 can fat-free vegetarian refried beans
1 (12 oz) bottle mild taco sauce
2 cans stewed tomatoes (one drained, one not)
1 cup fat-free cottage cheese
1 cup corn kernels
10-12 lasagna noodles, uncooked
1/4 cup black olives, sliced
Instructions
1. Mix beans with half the juice from one tomato can and a couple tablespoons of taco sauce until almost pourable.
2. Mix remaining taco sauce and tomato juice. Set aside.
3. Put 1/4 of sauce mixture in bottom of 9x13" pan.
4. Cover with layer of noodles.
5. Layer beans, corn, cheese, drained tomatoes, sauce, and noodles in any order.
6. End with enough beans to cover top (no noodles showing).
7. Cover tightly with foil. Bake at 350°F for 1 hour until noodles tender.
8. Remove foil, sprinkle with olives, bake 2 more minutes.
9. Let sit 5 minutes before serving.
