Bean and Pasta Stew

Hearty stew with French cassoulet flavor. Cooks faster since pasta cooks in the stew!

Ingredients

1 cup onion, chopped 1/2 cup green pepper, chopped 3 cloves garlic, minced Nonfat cooking spray 16 oz can stewed tomatoes (2 cups) 16 oz can kidney beans, undrained (2 cups) 6 oz whole-wheat pasta shells (3 cups cooked) 1 cup water 1/2 teaspoon oregano 1 teaspoon basil 16 oz can garbanzo beans, undrained (2 cups) Pepper to taste

Instructions

1. Sauté onion, green pepper, and garlic in pot sprayed with cooking spray. 2. Add tomatoes, kidney beans, pasta shells, water, oregano, and basil. 3. Bring to a boil, cover, and simmer until pasta is tender. 4. Add garbanzo beans and pepper to taste. 5. Heat thoroughly and serve. Note: Use salt-free tomatoes and beans if watching sodium.
