Bean Potato Crockpot Stew

Easy slow-cooker stew with pinto beans and potatoes. Set it and forget it!

Ingredients

1 pound dried pinto beans, soaked overnight Vegetable broth 3 potatoes, cut in chunks 1 onion, chopped 1 can spicy stewed tomatoes, mashed slightly Various seasonings to taste

Instructions

1. Drain soaked beans and discard water. 2. Place in crock pot and add veggie broth to cover. 3. Cook on high about 1 1/2 hours. 4. Add potatoes, onion, stewed tomatoes, and seasonings. 5. Cook on low another 4 hours or until beans and potatoes are tender. 6. Makes more of a stew than soup.
