Bean-Style Polenta

Savory polenta made with black bean stock. Serve with Thai curry or mushroom sauce!
Ingredients
2 1/2 cups vegetable stock
1/2 cup black bean cooking liquid
1 cup polenta
Frozen stick of butter (for greasing, about 1g used)
Instructions
1. Pour liquids into a pot and bring to rapid boil.
2. Slowly pour in polenta, keeping grains separate. Stir if needed.
3. Stir almost continuously for about 30 minutes until polenta is firm and comes away from sides of pot.
4. Pour into loaf pan. Refrigerate to firm up.
5. When ready to serve, heat griddle on medium flame.
6. Swipe griddle with frozen butter stick (tiny amount for lubrication).
7. Slice polenta into 8 slices and grill about 5 minutes per side until browned.
8. Serve with Thai curry sauce or mushroom sauce.
