A colorful and elegant salad with marinated beets and fresh orange sections.
Ingredients
1 (16 oz) can sliced beets, drained
1/4 cup chopped red onion
2 large oranges, peeled and sectioned
Green leaf lettuce
Marinade:
3 tablespoons cider vinegar
1/4 teaspoon ground cumin
1 teaspoon sugar
Instructions
1. Combine vinegar, cumin, and sugar in a bowl and stir until sugar dissolves.
2. Add onion and beets, stir gently to coat.
3. Refrigerate for at least 1 hour.
4. Line plates with lettuce leaves.
5. Using slotted spoon, place beets and onions in center of plate.
6. Arrange orange sections around the beets.
7. Serve chilled.
