A hearty baked pasta casserole loaded with vegetables and vegetarian crumbles. Easy one-dish meal.
Ingredients
1 box (8 oz) whole wheat rigatoni
1 jar (26 oz) fat-free pasta sauce
1 can (14.5 oz) diced tomatoes
1 bag (16 oz) frozen broccoli, pepper, onion, mushroom mixture
1 package frozen broccoli florets
1/2 bag (6 oz) frozen vegetarian burger crumbles
1 teaspoon dried basil
1/4 teaspoon fennel seeds
1 bag (4 oz) shredded non-fat mozzarella or soy cheese
Instructions
1. Preheat oven to 400°F.
2. Cook pasta according to package directions. Drain.
3. Combine pasta and all remaining ingredients in a 9x13-inch baking dish.
4. Mix well to distribute ingredients evenly.
5. Bake until heated through, about 20 minutes.
Note: The fennel seeds give the soy crumbles a sausage-like taste. Looks as good as it tastes!
