An amazing black bean chili with Hungarian paprika and cumin. Excellent over rice, with cornbread, or over potatoes.
Ingredients
3 cups dried black beans
2 large onions, chopped (about 2 cups)
6 cloves garlic, minced
1 bay leaf
4 teaspoons cumin
1 tablespoon sweet Hungarian paprika
1/2 teaspoon cayenne pepper
2 tablespoons chili powder
2 teaspoons oregano
1 green pepper, chopped
2 cans (16 oz each) peeled tomatoes with juice, chopped
1 teaspoon sugar
Salt to taste
Cider vinegar and water for sautéing
Instructions
1. Soak beans overnight, drain.
2. In large stockpot, sauté half the onions and 2 cloves garlic in cider vinegar.
3. Add beans, 8 cups water, and bay leaf. Bring to boil, cover and simmer 1 hour.
4. In second pot, sauté remaining onions until soft, add 2 cloves garlic and green pepper.
5. Add all spices and sauté 3-5 minutes.
6. Add tomatoes with juices, sugar, and 1/2 teaspoon salt. Simmer 30 minutes.
7. Combine beans with tomato mixture, add remaining garlic.
8. Simmer 1-2 hours uncovered until desired consistency.
9. Adjust salt to taste.
