A crowd-pleasing combination of black beans and sweet corn with a cilantro-lime dressing. Doubles as a dip with tortilla chips.
Ingredients
2 cans (15 oz each) black beans, rinsed and drained
2 cups corn kernels (fresh, frozen, or canned)
1 red bell pepper, diced
1/2 cup green onions, sliced
1/4 cup fresh cilantro, chopped
3 tablespoons fresh lime juice
1 tablespoon apple cider vinegar
1/2 teaspoon cumin
1/4 teaspoon cayenne pepper (optional)
Salt to taste
Instructions
1. If using frozen corn, thaw and drain. If using fresh, cut from cob.
2. Combine beans, corn, bell pepper, green onions, and cilantro in a large bowl.
3. Mix lime juice, vinegar, cumin, cayenne, and salt in a small bowl.
4. Pour dressing over salad and toss well.
5. Refrigerate at least 1 hour before serving.
6. Serve as a salad or with tortilla chips as a dip.
