A delicious Condiments recipe from the FatFree archive.
Ingredients
Here is my attmpt to replicate 'Northern Lights Black Bean Dip' - you can't
get it in Australia (and I became very addicted while living in Canada)!
450g can of black beans (I've also used kidney beans and mixed beans...)
1 tsp ground cumin
1 tsp chile powder (ie chile/cumin oregeno mix)
1/4 cup vinegar (more or less to taste)
1/4 cup chopped corriander (optional!)
Drain and rinse beans, process in food processer with other ingregients
till fairly smooth, adding water to bring it to the right texture. As you
get it in Australia (and I became very addicted while living in Canada)!

I've served this with chopped veggies and crackers as a dip, with salsa and
FF corn chips, on toast for breakfast and even on pasta. It is also good
to thicken soups. Next I might try it as a filling for chinese style
steamed buns.
